I'm Giovanni Aiello, an international sommelier and hospitality professional with experience across fine dining environments in Europe, Asia, and Australia.
I hold a WSET Level 4 Diploma in Wines, I'm a certified Sake Sommelier, and an Italian Wine Ambassador. I've also served as a sake judge, deepening my connection to Japan's sake culture.
Over the years, my role has expanded beyond wine lists and pairings. I'm equally interested in how a restaurant operates—how teams work together, how service flows, and how structure supports creativity.
I enjoy building beverage programs that feel honest, balanced, and connected to their context, with a focus on craftsmanship, storytelling, and sustainability.

I'm drawn to products with a strong sense of identity—whether wine or sake—and to the stories behind them. Sharing those stories in a simple, genuine way is at the core of what I do.
I'm particularly interested in how different cultures approach hospitality, and how wine and sake can coexist in a modern dining environment.
